Low temperature cooking, with gentle heat always under control
With gentle heat that is always under control, Cook&Hold cooks food almost as if wrapping it up like a blanket, allowing time to work on the aromas and nutrients. This is the ancient method of low-temperature cooking applied by Moduline to its innovative static ovens, whose cooking does not attack the fibers of the food.
Thanks to static or natural convection heating, Cook&Hold ovens transform food fibers naturally, enhancing the quality of the product, keeping it soft and succulent, and reducing weight loss as well.
In fact, the DELIWARM heating system adopted by Moduline uses a heating element wrapped around the outside of the cooking chamber, which is designed to achieve uniform, stable, and electronically controllable temperatures.
For the most demanding customers, Moduline also offers (in the CHC models) the Delta-T system, which allows setting the correct difference (delta) between the temperature of the chamber and the core temperature of the food, keeping it constant until the holding cycle, for further maturing. The smaller this difference, the better the final result.

authentic low-temperature cooking
- The Deliwarm System is designed to maintain a constant temperature in the cooking chamber, both during cooking and holding phases, through gentle heating without forced ventilation. The electronic control is intuitive and easy to use, even for less experienced personnel. (The 8-button board and/or colour touch display depends on the model).
- The manual front vent (in CSC-CSD-CHT models) allows perfect regulation of the humidity level.
- Adjustable feet with suction cups facilitate easy counter installation (in C-CSD-CHT models).
- The door handle is ergonomic and fully recessed, magnetically locking (in CSC-CSD-CHT models) or snap-locking (in CHC models).
- Internal lighting and low heat emission glass allow users to monitor all cooking phases (standard in CHC model).
- Trays runners are easy to remove and wash.
- The core probe, with multi-point reading and an ergonomic handle, is highly durable and suitable for frequent use and high stress.
- The absence of ventilation prevents the product from drying out and eliminates the need to humidify the cooking cavity, saving water.
- The moulded silicone door gasket resists high temperatures and is easily replaceable.
- Low power and precise temperature control ensure minimal electricity consumption.

- The plastic perimeter bumpers and four wheels with a diameter of 150mm (two of which have brakes) make for easy mobility, while side push and guide handles ensure full mobility (in CHT-CHC models).

EXTRAS
BUILT-IN' mode
All CSC and CSD models can be installed in 'built-in' mode with frontal moisture evacuation, allowing the user to control the moisture level of the product being cooked while it is held.
"BUILT-IN' installation with remote controls
Models for built-in installation are also available with remote controls (in the CSD range in ER version).
USB port
Software, recipe book, and HACCP data are always at hand (standard on CHC models, not available on CSC-CSD-CHT models).
Self-diagnosis
The self-diagnosis system checks the correct functioning of all electrical components (on CHC models).
Drainage system of cooking juices
Avoid the use of drip pans inside the cavity and the handling of hot liquids (only in CHC models without ECOWASH).
Condensation drip trays
The condensation drip tray is built into the door and connected to the oven drain system or to the rear drain of the washing system (if present, only on CHC models).
PadLock
The keypad lock system with a key combination (for an 8-key board) or with a user password (for the Touch board in CHC models) guarantees the chef maximum data protection or unintentional interruption of the cooking program (in CHC models).
ProTime
The ProTime system allows you to set the date and time when you want the oven to preheat or start a cooking program (CHC models only).
Corecheck
The core probe monitors the achievement of the desired core temperature. Up to 30 different core temperatures can be saved at the end of the cooking process as HACCP data (only on CHC models).
Ecowash
The Ecowash washing system, optional on the CHC range, automatically washes the cooking cavity with four different programs. The option provides a connection to the water supply and a drain for dirty water. This option eliminates the frontal discharge of cooking juices, which must then be collected in a pan placed on the bottom level of the oven in the cooking cavity
