A completamento della gamma Cook&Hold, Moduline presenta Smoker: una linea di forni a bassa temperatura che hanno in dotazione un affumicatore elettrico esterno e combinano i vantaggi della cottura a bassa temperatura con il gusto robusto dell’affumicatura. Per accontentare tutti i palati, Smoker può essere regolato su tre livelli: soft, medium e hard. L’affumicatura è particolarmente indicata per la cottura delle carni, ma può essere applicata anche, a temperatura ambiente, ad affettati, latticini freschi, verdure, carni crude, ecc.
By means of the Touch screen, in fact, the chef can decide to smoke without cooking, or to combine room temperature smoking with hot smoking during cooking (up to 9 steps for each cooking cycle), choosing the smoking temperature and time at his like. In addition, in order to preserve the full capacity of the equipment, and also to avoid overheating the cavity during smoking at room temperature, Moduline designed the installation of the smoker outside the cooking cavity.

The temperature can be adjusted from +30°C to +160°C.
The automatic cooking programs are divided into six product categories, providing a perfect starting point for all cooks, including the less experienced.
There are three smoking programs available: Soft, Medium, and Hard.
A manual cooking procedure is also available, with the ability to save the recipe to favorites.
The cookbook is customisable and easily navigable.
The cooking programs, with nine different stages, offer high performance in food processing.
The Delta-T function offers the possibility of adjusting the temperature difference between the oven cavity and the core of the product as desired and allows you to enhance the tenderness of the meat and minimise its weight loss.
This function is designed to check the proper functioning of all electrical components.
Avoids the use of drip pans inside the cavity and the subsequent handling of hot liquids (only on models without ECOWASH).
The keypad lock function with password guarantees the chef maximum data protection and unintentional interruption of the cooking programme.
This function allows you to set the date and time at which you want the oven to preheat or start a cooking programme.
The CoreCheck system verifies that the desired core temperature has been reached. Up to 30 different cooking temperatures can be recorded and saved in the HACCP data.
The optional Ecowash washing system automatically washes the cooking cavity with 4 different programmes. The option provides a connection to the water supply, a drain for dirty water and the elimination of the front drain for cooking juices, which must then be collected in a pan placed in the cooking cavity, on the top level of the oven.
