È l’antico metodo della cottura a bassa temperatura applicato da Moduline ai suoi innovativi forni statici, la cui cottura non aggredisce le fibre degli alimenti.
Grazie al riscaldamento statico o per convezione naturale, i forni della linea Cook&Hold trasformano le fibre degli alimenti in modo naturale, esaltando la qualità del prodotto, mantenendolo morbido e succulento, e riducendone anche il calo di peso.
In fact, the DELIWARM heating system adopted by Moduline uses a heating element wrapped around the outside part of the cooking cavity, which is designed to achieve even, stable and electronically controlled temperatures.
To the most demanding customers, Moduline also offers (in the CHC models), the Delta-T system to set the correct difference (delta) between the cavity temperature and the core temperature of the food, keeping it constant until the holding cycle, for further maturation. The lower this difference, the better the final result.

authentic low-temperature cooking
- The Deliwarm system, thanks to gentle heating without forced ventilation, is meant to keep a constant temperature in the cooking cavity, both during the cooking and holding phases. The electronic control is extremely intuitive and easy to use, even by less trained staff (8-button board and/or colour touch display, according to model).
- The manual front vent allows perfect regulation of the humidity level (on CSC-CSD-CHT models).
- Adjustable feet with suction cups facilitate easy counter installation (in C-CSD-CHT models).
- The door handle is ergonomic and fully recessed. With magnetic (on CSC-CSD-CHT models) or snap-lock (on CHC models).
- The internal light of the cooking cavity and the low heat emission glass allow the user to keep all cooking phases under control at all times (standard on CHC model).
- Trays runners are easy to remove and wash.
- The multi-point core probe has an ergonomic handle, durable and suitable for frequent use and high stress.
- The absence of ventilation prevents the product from drying out, without adding humidity in the cooking cavity and thus consuming water.
- The moulded silicone door seal is designed to withstand high temperatures and to be easily replaced
- Low power and precise temperature control ensure minimal electricity consumption.

- The perimeter bumpers are made of plastic. The trolleys are also equipped with four wheels with a diameter of 150 mm each, two with brakes. Side handles ensure full mobility (on CHT-CHC models).
- The condensation drip tray built into the door is connected to either the oven drain and the rear drain of the washing system (if available, only on CHC models).

EXTRAS
BUILT-IN' installation
All CSC and CSD models can be installed as 'built-in' models with frontal moisture vents, which allow the user to control the moisture level of the product during the holding cycle
"BUILT-IN' installation with remote controls
Models for 'built-in' installation are also available with remote controls (in the CSD range in ER version).
USB port
Software, recipe book, and HACCP data are always at hand (standard on CHC models, not available on CSC-CSD-CHT models).
Self-diagnosis
The self-diagnosis system checks the correct functioning of all electrical components (on CHC models).
Drainage system of cooking juices
Avoids the use of drip pans inside the cavity and the subsequent handling of hot liquids (only on CHC models without ECOWASH system).
Condensation drip trays
The condensation drip tray is built into the door and connected to the oven drain system or to the rear drain of the washing system (if present, only on CHC models).
PadLock
the keypad lock system with key combination (for 8-key board) or with user password (for Touch board on CHC models), guarantees the chef maximum data protection or unintentional interruption of the cooking programme (on CHC models).
ProTime
The ProTime system allows you to set the date and time when you want the oven to preheat or start a cooking programme (only on CHC models).
Corecheck
The core probe monitors the achievement of the desired core temperature. Up to 30 different core temperatures can be saved at the end of the cooking process as HACCP data (only on CHC models).
Ecowash
The Ecowash washing system, optional on the CHC range, automatically washes the cooking cavity with 4 different programmes. The option provides a connection to the water supply and a drain for waste water. This option eliminates the frontal discharge of cooking juices, which must then be collected in a tray placed on the bottom level in the cooking cavity.
